Green makes me Happy!
This year for the first time I am starting herbs in the house rather than buying them at greenhouse. To my delight most of them are growing. A few possible mishaps with the beans I am growing they are not turning into plants yet and hope they do not rot. I have to say it brings joy to see something grow, in the spring that seems to never come. It brings hope and hopefully some flavor to my concoctions in the future. What can say it brings me hope and makes me happy!
A Little Eggroll on the Healthier side
Most people get a craving for an eggroll.....I Like the crispy part not so much the greasy part. The other day I made wontons- today I made eggrolls. I used the meat mixture of pork or substitute with ground chicken add loads of ginger, garlic, cilantro, chives and salt and pepper than add raw thinly sliced cabbage and shredded carrots to the meat mixture and stuff into the small wonton wrappers turn into bitefull treasures stuff and seal edges with water. Than at high heat not fry but bake brush with tablespoon of oil depending how many you make and bake till crispy and golden brown. Than dip with your favorite dipping sauce,,,tangy , sweet and spicy, salty and sour, spicy and savory whatever you choice is dip these delectable morsals. Healthier choice and fill the craving without being greasy.

Today it is raining and cold...everyone has been wishing for Spring, Sunshine, and Spring Flowers and I am with everyone and all over that. However I cherish days like today windy, rainy, and cold and I have an excuse to stay inside and drink coconut green lattes and think of something to bake. I review the health blogs and healthy: gluten free, vegetarian, dairy free, and soy free. I do not decide on something gluten free, I decide god believes in balance and moderation and choose to make Focaccia Bread. Even though I like to read health blogs, interested in being healthy it is plagued with confusion and contradictions. Mostly overwhelming. I am not skinny person, sometimes slothful, but still desire to be healthy. With all the contradictions out their I have decided to listen to my body to what makes me feel good, that means eating variety of things and recognizing certain foods make my body and soul feel good. So I know longer eat pasta and bread every day because it does not make me feel good but rather have when my body has need for it. I feel are bodies tell us what they need if we really listen, it is not just from emotion but what nurtures it. Like a green goddess smoothie makes my body feel good in the morning. I do digress from the Focaccia bread which I made with whole wheat flour and some white flour, yeast, tons of garlic, chives , cilantro, salt and pepper, topped with thinly slice tomatoes, salt and pepper, parsley, some aged Parmesan,drizzled with olive oil. So eat in balance soothe your soul and listen to your body. have slice of Focaccia Bread now and again. I wish for you today the smell of rustic bread baking and a warm cup of your favorite tea.

Nourshing Broth
Tonight I made a simple Broth of onion, celery garlic, ginger, cilantro, fish sauce, salt and pepper , and some soy sauce... in it I bathed carrots, thin strings of cabbage, snow peas, mushrooms and wontons wrapped a mixture of pork laden with lots of garlic, ginger, cilantro and salt and pepper and dash of sugar and soy sauce. Upon this I dressed the bowl of steaming broth filled with vegetables and homemade wontons with fresh green onions, cilantro and bean sprouts.
A broth is meant to be shared, to warm not just your soul but someone else's!
Tonight remember someone who needs some warmth and share the beauty of Broth filled with mouthfuls of joy.
